A Surplus of Bananas

Banana Cake There’s a surplus of bananas in our house this week since Mr. Munro brought quite a few hands home last week. I love bananas but for me they have to be on the green side in order for maximum enjoyment.

Once they ripen, in my opinion, the only thing they’re good for is cooking – either banana cake or banana muffins. I made banana muffins the other night and they were delicious.

Tomorrow, I’m going to make my favorite banana cake.

Banana Cake (Shelley’s favorite recipe – from the Edmonds Cookery Book)

125g (4 oz) butter
175g (6 oz) sugar
2 eggs
2 mashed bananas
1 teaspoons baking soda
2 Tablespoons boiling milk
1 teaspoon baking powder
225g (8oz) flour

Cream butter and sugar, add eggs, mashed bananas, then baking soda dissolved in boiling milk. Lastly add flour and baking powder previously mixed. Bake in two greased sandwich tins for 20 mins at 180 degrees C (350F).

Note – I tend to improvise when I cook anything. I like to add either walnuts or chocolate raisins or plain chocolate chips to my cake. I cook mine in one loaf tin. I also like to add some wholemeal flour so substitute some of the white for wholemeal. My oven is a fan bake one and it tends to cook more quickly so I set my timer for ten minutes and check my cake. Normally it takes around 15 minutes before the top springs back when I touch it and/or cracks appear in the top. Once cool I ice with either chocolate icing or lemon icing, depending on my mood. I make a glace icing with icing sugar, a bit of butter, cocoa and a dash of boiling water to bring it to the right consistency.

    Ooh, angel food cake sounds nice. Estella, last year my husband planted zucchini in his garden. We had zucchini coming out our ears! I wish I’d known there was a recipe for a cake. LOL – I refused to let him plant it again this year. I needed a rest!

    Cathy – is a pound cake quite a plain cake? I think we call them butter cakes in NZ, if I’m thinking of the right one. They’re plain and simple and very yummy!

    It looks good but I’m not a fan on banna cakes. I wonder if maybe you could like switch up the recipe to use say almonds ?

    Hi Tameka – I’ll have to organize a nice chocolate or carrot cake for you then! I can switch the recipe any way the ingredients in my cupboard dictate :grin: I’m terrible for improvising. Mostly my experiments taste okay but there are some that go a little wrong and end up in the dog’s dish.

    You may find this very strange, but…I only like bananas when they are baked into a loaf or muffin form. I can’t stand them by themselves or let’s say, a banana split! I love a good carrot cake, too. That loaf is making my mouth water as I type this.

    Hi Laura – you’re not so different from me. I’ll only eat the really green bananas and I’m not very keen on banana splits, but give me a banana cake and I’m a happy camper.
